Cooking Adventure! Salmon.

Seafood is great. But, when seafood is cooked to perfection, it's SPECTACULAR! One of my favorite seafood dishes is salmon. It's a fantastic fish that's healthy, inexpensive, and most importantly, delicious. So, I thought I would provide the little amount of followers I have, and anyone else who's interested, my favorite salmon recipe. Here's what you need:

  • .5 lb of fresh salmon
  • 2 small pineapple wedges
  • 1 bottle of Maggi: Sweet Chili Sauce

Now, I like to grill my salmon, but you can use a conventional oven. If using a grill, light your charcoal, or turn on the gas. You're going to need to get that sucker up to about 300 degrees. If, you're using the oven, preheat to the same temperature. While things are heating up, marinate the salmon by placing the filet into a plastic bag. Pour in about 1/4 of the bottle of Sweet Chili sauce, and marinate for 15 minutes.
While the salmon is marinating, dice up the two pineapple wedges.
After 15 minutes, the grill/oven should be nice and hot. Take your salmon out of the bag, place it on a sheet of tin foil, and spread your diced pineapple over the filet. I like to pour a little extra Sweet Chili Sauce over the filet before adding the pineapple.
You're almost ready to cook. Wrap the salmon loosely in the foil if you're taking the grill route. Just place the salmon and foil on a baking sheet (no wrapping needed) if you chose the oven.
Place the fish in your cooking device, and let it cook for about 20-25 minutes. The inside of the fish should have a light pink color when it's done.
After about 20 minutes, you should be ready to eat. Take the salmon out, place it on a plate, and add your favorite side items. Now that's what I call an outstanding meal!

Music Evolution!

I'm a huge music lover! There's nothing like listening to your favorite tunes. I feel the music we enjoy is the truest form of individual expression. I love finding music that really speaks to me, so I thought it would be fun to post the top 10 songs/albums that have defined different stages of my life. I'm starting with freshman year in high school, because any music I listened to before this time shouldn't even be called music. Here it is, the top 10 songs/albums of Kyle Austin Jernigan's freshman year in high school. Let's take it back to '03.

Take a Breath

The past two weeks had me locked away in the UNF library. I felt like a hibernating bear. This library dwelling was due to the most important class of my college career, ad campaigns. My team and I had to develop a campaign for Nissan, and there was a lot of last minute work. I believe the countless hours of preparation paid off. We had a solid campaign that was creative, organized and successful. My role in the campaign was to create all the advertising for print, outdoor, online and TV media. I’m proud to say I’ve become very acquainted with Adobe Photoshop, Illustrator and InDesign. My greatest task was to create a media plans book that explained our campaign in detail, and this is what I have spent most my time on in the last two weeks. We had our presentation this past Wednesday, April 18. Three judges active in professional advertising critiqued our campaign. They seemed very impressed with our strategy, media use, and creativity. I’m stoked everything went well, and appreciate the experience I have gained. After the presentation I celebrated with some of my team members, and deepened a bond with new friends. Today, I feel I have taken a huge breath as I have gained the time to fish, and post on a neglected blog. It feels great!

Deer Tick

Another band that I currently listen to EVERYDAY is Deer Tick. Unfortunately I missed them at this Bonnaroo performance.

Monkey Hunting!

This Easter weekend was filled with fun, family, adventure, and a bird rescue. I finally had a chance to use my new kayak. I took her out on the Silver River,  most known for its wild Rhesus monkeys. You may be wondering how there are wild Rhesus monkeys in the heart of Florida.
According to Joe Kegley, writer for Wildlife South, "In 1936, the owner of the Jungle Cruise at Silver Springs, Colonel Tooey, came up with the idea of creating a monkey island on the Silver River to entice more tourists to the area. Not thinking the monkeys would swim away, he placed them on the island. The monkeys did indeed swim off the island and propagated. The monkeys can now be found up and down the Silver and Oklawaha river corridors" (2007). Here are some pictures!


    
   


After my adventure on the river, I went home and took one of the best naps of my life. This delightful moment of rest and serenity was abruptly ended by my dog. She decided to wake me up by jumping on my bed, and barked until I eventually succumbed to her efforts. It was good timing though, as I my dad wanted to take me shopping for business attire before the stores closed. I just received a corporate marketing internship with Advanced Disposal, so he wants me to dress nice. But, we never made it to the store because of one lucky snake bird.
In the car port we noticed the bird struggling to walk. When we got a closer look we realized it had rope wrapped around its beak. With Josh's help we managed to rid the bird of its problem, and freed it in a lovely pond.

Twitter and Politics

I attended an excellent presentation today at UNF. The presentation discussed the power Twitter has on politics, and from what I learned, Twitter has a LOT of power. Politicians have learned how to use Twitter to maintain a relationship with their devout followers, explain their political goals, and suggest articles for their followers to read.
The 140 character limit on Twitter has actually given politicians many advantages. The limit requires the tweeter to write clear, concise and to the point messages. This is an advantage. When writing on social media, it's easy to lose followers in long and jumbled messages. The 140 character limit allows politicians to share links. The link can fully explain their opinions, or give more detail about their tweet.
To my surprise, politicians use Twitter often. One girl in the audience claimed she had a conversation with a mayor on Twitter. Politicians focus their attention on influencers. Influencers in social media gain authority through their knowledge, experience, and writings on particular topics. By ensuring the influencer's happiness, politicians can reach their followers and the world of social media fully opens up.
